I would recommend checking out Musictechhelpguys youtube videos. He covers several different Daws.
For logic I would also check out Mikael Bagstroms videos. They are excellent.

I play the song a lot too and always improvise the solo. Also do it in a duo with a flute player (my daughter) and she also improvises the solo.
No one ever noticed.

I picked up Pianoteq in Nov. at the Black Friday sale and am very happy with it. I think it has a different feel and playability than sample based pianos because there is no velocity layer switching. I am a 35 year full time piano tuner/technician that listens to real pianos all day and it doesn't sound fake to me.
I would recommend getting the Steinway B because you get 2 pianos - The New York and the Hamburg and they have been upgraded in Pianoteq 7 and sound very good.

I also just picked up Pianoteq a few days ago at the Black Friday sale and I am very impressed with it so far.
I picked the Steinway D, Steinway B and Bluethner for my three included instruments. I'm sure I'll be adding more.

I've been thinking about picking up the Ravenscroft 275 VST while it's on sale. I have the iOS version and it's okay. Is there a big difference in sound quality and playability in the VST version. I have some of the Sampletek pianos and the Waves Grand Rhapsody and would like to add a high quality piano. Not sure whether to get it or wait and get something else like the Garriton CFX or Ivory.

I have the White Grand and the Black Grand. I also have the Emperor and the Old Lady which are no longer available.
I don't have Kontakt but I use them in Logic's EXS24 sampler. I just downloaded TBO and hopefully my old MBP will be
able to handle it.

Sampletekk usually has a sale a few times a year with 50-60% off but I just noticed they have 80% off everything on their website until July 8th.
I might have to add a few pianos to my collection.
