Another approach, discussed here in the past, is to put two sustain pedals right next to each other on a board, for the upper and lower keyboards, and then as long as the pedals are close enough to each other, you can choose to press just the right pedal, just the left pedal, or put your foot down in the middle when you want to press both pedals. It's easy to do, at least with the little flat square sustain pedals. (Those don't give you half-pedaling,  though.)
