Woohoo.....I cooked some ribs from hell yesterday......you could smell the mesquite and hickory all over the neighborhood. Thank you Uncle Sam for my paid holiday.....short as it was.

Well we had that too.....but I started cooking at around nine in the AM, it takes at least four or five hours to correctly cook pork ribs, in the Texas tradition. We did have all the whistles, pops, booms, and bangs till around midnight......sure made it a bitch to get up this morning, but coffee saved my life......again.

Mmmm...smoked pork ribs and beeeer...fattening...

 

Well, I gotta ask...what's the Texas sauce base? Here in KC it's a tomato based sauce with varying degrees of molasses, making it anywhere between boxcar red and a deep brown sweet sauce (like KC Masterpiece). I know North Carolina favors a vinegar based sauce, South Carolina I believe favors a mustard based sauce...

 

And I believe I read you're in Virginia somewhere? When I lived there I remember one restaurant used a tomato/vinegar based sauce (I'd KILL to get my hands on that recipe, but they've been out of business for years. Never tasted anything like it before or since)...

I didn't use sauce, I used a local spice bottle my Mom sent me from Tejas, that, and garlic, salt and pepper. The secret is the mesquite/hickory smoke. Ted I'll find the recipe for ya. Yeah I live in Virginia Beach....in suburb hell. I actually live in a really nice neighborhood but I still feel fenced in, I grew up country.

I imagine KC and Texas bbq sauces are similar. I like KC masterpiece, and I like Heinz chunky bbq sauce...of all the store bought ones. My wife is a native North Carolinian, and she has her own version of bbq sauce that she occasionally whips up.

In that you actually know the different bbq sauces from different regions of America says alot!!!! Ha Ha!!!! Now, we could get into brew pubs.....another WONDERFUL discussion that shows our stripes!!!!! : )

Well, I think it's almost illegal to eat barbecue without beer. But, for the most part, I like a nice honey wheat ale...but I'm not (don't spread this around) the connoisseur I should be...

Aw shucks Lee ya made me all embarrased, gotta say though I seriously considered having a 'losers' party at my house this year, we never get to celebrate anything like the 4th July its all boring stuff here and I used to love the celebrations when I lived in the USA, it is still my spiritual home ya know and I still miss it badly.....
