Lots of sounds from kb's have been just like gtr (or horns, etc) sounds. Nor is it even the ability of a player to grasp & play w/ the effects that a non-kb instrument uses. Jan Hammer did that somewhat (as did other synth players (although in actuality his presentations were more just use of bending & vibrato) & instruments such as sax have been able to do gtr licks for years, as gtrs have been able to imitate harmonica (dig D Allman). The kick here is both the advances in technology that allows tracking those effects & the playing skill of Parisi (& no doubt some others) in conveying them. This is not just a novelty trick. This is the future looking us in the face & saying, as Hendrix did in 1966, "Here I'm am ! Ya'll coming ?"
