Occasionally I run across posts worded almost exactly the same as yours, but for other keyboards, so it's definitely nothing unique with this particular model. I've never been able to sort out exactly why some people can't seem to reach 127 velocity in those cases. All I can imagine is that some are underestimating the physical velocity needed to strike the keys, in which case setting the keyboards touch response setting to "light" would help reach higher MIDI velocities with less physical work playing. Or, become Jerry Lee Lewis as @J.F.N. mentioned. 😅

High resolution velocity is always enabled internally. The High Res ON/OFF function is for the USB MIDI output. Some software is not compatible with the high resolution standard and may cause some issues, so an OFF switch is needed for those cases.

If you get the chance, try the preset tone called "stage piano". It's not on the PX-S1000 unfortunately, but is on the PX-S3000. To my ears, it has quite a different timbre from the concert grand preset. I'm not sure what "plunkiness" is, but the stage piano preset might be what you want.

S1000 have a way to do direct patch selection, etc?
Can it accept MIDI patch change, etc. from MainStage or Cantabile?
Or do you have to press button and press audible key strike to do everything on this interface?
Yes, It recognizes bank select MSB and program change to select tones via MIDI. The PX-S1000 manual has a chart listing the parameters needed to call up each preset tone.
It's also possible to select tones from Casio's own mobile app, Chordana Play for piano.
As for audible key strikes to select tones, notification tones can be disabled.

The best way (for me, the only way) to audition internal speaker sound quality is to listen in person. I don't trust recordings of them. It's easy to get the wrong impression from a recording.

I'm curious about things like what facilities it may have for quick patch recall of your favorites from among its 700 sounds, or from among any saved split/layer combinations you might assemble (registrations). Or are these still things you'd have to look at the older higher end models for?
The PX-S3000 has 96 registrations.

Are you referring to the older PX-750 rather than the new AP-750? I'm a little confused since you mentioned 7000 is quite a bit more expensive than the 750, which is actually the other way around if it's the new AP-750. Maybe just a typo?
