I came across what looks to be a great recipe for a very spicey kimchee today. The following is for a Mexicanized version of the Korean favorite:

Yee-f'wordin'-HAH, orange-habanero! One of my favorite flavor combinations!! (Funny, no mention of orange or orange-zest past the recipe title...) Nice recipe, thanks, MrNJGG ! "Chop peppers (with seeds)"... authentic sticklers, or masochists! I might sub leeks for the onions, I don't get along well with "regular" onions unless they're only a subtle harmonius enhancement, and totally NOT THERE as a tactile texture. I CAN NOT bite into them or their bits. Just my weird onion hang-up, that's all. But, habaneros, and garlic... ooooohhh, fresh ginger root... now you're preachin' to the faithful! Mmmmmnnnn... !! Those things are all gifts from the Good Gods.

"Habanero's Revenge"... Idunno, it sounds like more of a smooth move than the title would suggest... :D Naaa, just razzin'... at first it makes me think that a Santana devotee from back east has just joined Steely Dan after, well, after a smoke break, yeah, that's what it's after. ;)

 

Whatcha playin' on, and through? Nice, just enough hair on it for the part, not too distorted and not too dark or terminally "lounge". I like how it sounds like you've got some kinda organism mixed in with some of the supportive comping "riddum" guitar. (Which does sound more like your usual "jazz guitar" suspect. In a good way.)

 

Now, is there some kind of short, textural delay or chorus on the "lead" guitar, or its reverb? There's something there that I don't quite like, but, then again, I can't eat onions, right? (Just kickin' the ball around here, my thoughts as I listen, for conversation's sake NOT a "critique"!). I can't quite put my finger on it, whatever it is; maybe it's just me!

I was really lazy, I must confess. Instead of using my real Mark IIC+, that was a J-Station, Mark IIC+ setting with David Gilmore patch. The guitar was my SG Standard. Rhythm guitar was my GB10 thru the Boogie Formula rack.

 

I actually played the chords on keyboard, but the fast piano solos were done via the Roland Strat and XP50 keyboard. Bass was me too, Japanese Fender J-Bass thru the J-Stations Ampeg patch.

 

I have an archtop rendition of the same song that sounds quite different.

 

Kimchee and Korean food are fantastic, btw. About 2 blocks from MSG in NYC is "Korean Way", a whole block of Korean resturants.

 

Thai is still my favorite!

 

PS I'm a SUNY-Bingo alumni.

Haven't gotten to the clip yet...but, I eat some of the hottest food I can find. I regularly use a sauce called "Da Bomb, Beyond Insanity" on my Cajun and Southwestern flavored food...stuff made right here in KC by OriginalJuan foods... www.originaljuan.com ...if you want to order some.

 

I don't know if it's helped my guitar playing at all, though.

Double-hah! I have a J-Station, too, and I listened to your track through the same headphones that I always use to play through here at home. It's that stereo-ized-reverb on the J-station, that's what it is! cool for what it is, but it has a funny flatness to the perceived "depth" of it. And, the compressor-limitor function on those has a funny, make that weird, artifact-laden distortion of its own that I have a love/hate thing with. I mean, when I'm playing through it, the squeeze and boost on it is great, but there's this weird low-end breakup that I just HATE in there, that is NOT there when I switch off the compressor. And no amount of knob-twiddling and scrolling and manual perusal will alleviate it; ya gets what yez pays for with alla that bang-fertha-buck, I guess! Still a cool unit, and I don't regret getting it; sure beats the Rockman XB100 that I ran into the ground!

I was at the House Of Blues in L.A. To see a concert with a buddy of mine. And we go to the restaurant there and each order up some dinner. The waiter brings him this rice and chicken dish and there's a bright hunter orange pepper on it that I think was maybe a Serrano. The waiter sets it down in front of my friend and says "Don't Eat The Pepper". All through dinner we both kept looking at it like it was a ticking suitcase or something. When the waiter came back for the plates, I had to ask: "Has anyone ever eaten the pepper?" The waiter said "Yes. He lost consciousness. We had to dial 911."

 

I like food a little spicy. I'll sprinkle a little Tabasco on here and there. I'll put a slice of Jalapeno on there and get that thrill happening. I like a good sized gob of that green stuff you get with California Rolls and a couple of slices of pickled ginger root. But I'll pass on the Serrano that landed the guy in the hospital. Not enough guitars in the hospital. :D

Kindly keep in mind the headphone output sounds very dark compared to monitoring the J-Station thru a PC. It's like night and day, seriously! I connect the J-Station via a S/PDIF coax to my Gina soundcard.

 

BTW, Musician's "Friend" was selling the discontinued J-Station for $99. I think it's worth the money just as a bass preamp alone. The guitar patches are nice to have too :D

Remind me to post my recipe for habenero chicken wings prior to the Superbowl. The city of Buffalo could use it to melt the ice on Lake Ontario.

 

If you control how much sauce that goes on each wing, you can tailor them to your taste without being overwelmed. Habenero has an ever so slight orange-y taste that makes them stand out in the pepper world. When people "meter their own dosage", they tend to fall in love.

 

BTW, a very small pepper was found a few years ago in rural northern India that displaced the habenero as "the world's hottest pepper".

I`ll have to find another computer to listen to that track. Are you guys familiar with www.peppers.com? lotsa cool stuff there. Dave`s Insanity is ridiculous-it`s legal incapacitation juice.

I`d like to know more about that Indian pepper.

Is that true? Habenero sauce is that ubiquitious down there? Glad to see it's caught on. Seems all the supermarkets carry them all the time now, as I've seen in NJ and CA.

 

The Habenero hails from Cuba I believe. Jamaican peppers are quite similar but only about half as hot.

Interesting slant there Dave. Somehow I don't think habeneros were on the menu for the Last Supper however. Kind of a ZZ Top kind of approach? I certainly do appreciate non-metal, non-rap forms of entertainment and wish to see them thrive.

Yeah, I know how the sound is different depending on the output (and anything downstream, for that matter). Cans color it, too; I have some inexpensive AKG K-55's that have a great sound for guitar, but are anything but "reference". They have a designed-in emphasized bass-response that both sounds cool for headphone jamming, and keeps me from muddying things up too much with the bass knob (more bass in my ears, less in the actual signal).

 

And, yeah, they are even better for bass, which is why I'll probably never get rid of it, no matter what else I get! Too handy to lose.

 

Yeah, I love the flavor that habaneros have, kinda "fruity", not as dry as cayenne or Jamaican Scotch bonnets. I've been wondering if they'd smoke nicely, kinda like a tangier chipotle?

 

If I've got plenty of bread, and not on an empty stomach, I'll munch on a habanero outta the jar. (On an empty tank, I'll get ferocious hiccups!) But they're really much more enjoyable in harmony with other ingrediants in a good recipe!

 

Take some Sweet Baby Bay's BBQ sauce, add a small amount of Jack Daniels (gotta be JD, to, for the same effect; charcaol filtered and all), a little chopped garlic, and minced up fresh or canned habanero (seeds optional!), "metered" to taste (or tolerence, whichever way you look at it). Slather liberally upon boneless, skinless chicken breasts, grille, and in the last so many minutes before they're ready, top with thin sliced tomatos and cheddar. When cheddar is melting, serve on a croissant or roll of your choice; seriously good eats! NOT "Atkins friendly", though!

I just bought a set of Sony headphones, MDR-V150. I haven't given them much of a road test yet, but I think they'll do. $20.99 at Best Buy.

Yep, can't beat that J-Station for handiness. For $99, it's still an incredible deal. Of course Line 6 would rather you spend another $250 for a Bass POD :{ I can't think of any other modeler that includes a few rudimentary bass patches, probably for the same rationale Line 6 has. The "Ampeg" patch reminds me alot of Rocco Prestia of Tower of Power, btw.

 

Have you used the S/PDIF connector? "No static at all". About as hi-fi as it gets.
