I have an old music magazine with a photo and caption of Charley saying Whats all this fuss about me being a rock star, I didnt even play drums on a lot of those songs. I'd like to know who played on Can't You Hear Me Knockin, It's one of my favorite Stones songs, Paul.

Well that WAS Charlie on "Can't You Hear Me Knocking" (one of my favorites too!). And Charlie's just being overly self deprecating as usual. There are not many Stones songs that he didn't play on. The only two I can think of are "You Can't Always Get What You Want" (on which producer Jimmy Miller played drums) and "It's Only Rock'N'Roll" (Kenney Jones of the Faces). Charlie's mentioned in a few interviews that people have complimented him on those songs and it wasn't him, and sorta neglects to mention all the great songs that WERE him. :D

As it happens I've just been reviewing one of Bill Wyman's recent books [Rolling With The Stones] wherein he details (to a degree) several of their recording sessions, studios & engineers.

He doesn't mention anyone other than who Lee F. cites, except for at times a variety of percussionists on congas, etc. That of course doesn't mean it never happened. Many Stones tracks started as non-band sessions (ex: "It's Only R & R") so who knows what might be in there.

Three of the Stones (Brian Jones, Keith Richards & Wyman) had skills on other instruments than guitars & but I've never heard of them taking the drum chair.

No, I think it's always Charlie other than those two songs. Not only do I have the "Stones Sessions" book which lists all their recording sessions and who was there, but there is rarely a Stones session where Charlie wasn't there. This is because, if Charlie is called in to work, he's extremely bored other than when he's playing the drums. :D So he'll literally just sit in the studio with his kit set up, waiting for something to happen, no matter how many hours go by. The minute even one other person starts playing, Charlie's head pops up from behind the kit and he sits down at the throne and starts playing along. For that reason, not much tape has rolled on the Stones without Charlie on it. I once attended a Stones rehearsal and he did the same thing - he never really took a break unless everyone else did. The rest of the time he was hiding behind the kit, waiting for somebody - anybody, to start playing so he could accompany them. He's a funny guy.

I do know of one other Stones track that Charlie didn't play on, but it was never released and I only have it on a bootleg. The song is called "Too Many Cooks" and it's kind of a funk rave-up. IIRC the drummer on it was Bruce Gary, former drummer with The Knack. It was recorded around the "Black and Blue" period and I really WISH Charlie'd been on it, cuz frankly the drums have no life to them whatever and that's probably why they didn't release the track. A funk song with a boring drum part may as well never see the light of day. :D

i believe ron wood played drums on some stuff going back to the some girls era and the horrible dirty work for sure. and jim keltner, anton fig and steve jordan are likely candidates to be uncredited on some late period stuff even if it's just a loop.
