My 2nd take on this was good, but not AS good.  Learned a few lessons.

 

1) I cut my mushrooms 3 ways this time: thin slices, chunks (from large caps), and ground up in a food processor.  While the ground ‘shrooms DID diffuse their flavor a bit better, their texture wasn’t the best.  And the chunky bits were a tad chewy.  Next time, sliced only.

 

2) I added a bunch of poblano and Anaheim pepper that I minced in the food processor.  They were a nice addition, but I used too little for it to be more than a subtle note.  Next time, a bit more…

 

3) I still haven’t found the sweet spot on the amount of dairy to use- it’s still a tad light.  Experiments will continue.
