That "high-water mark" is how much there had been before the Creoles swarmed the cooktop... And that's a 14qt pot. FWIW, Gumbo is actually pretty simple: bay leaf, pepper (red & black) parsley, thyme, onion, garlic, celery and filé a.k.a. ground sassafras (a thickener) are typical and sufficient on the veggies & herb side. The only salt in mine is from the other ingredients. Some add okra for flavor and as a thickener. I don't particularly care for okra, but if you know what you're doing, it can be good. There are only 4 okra gumbos I eat, 3 of them are made by fellow Louisianans, and one of THOSE is my Mom's cousin who used to have a restaurant. On the meat side, you can to as simple as a chicken and sausage, or as fancy as you like, Mom used to make hers with chicken thighs, smoked sausage, hot sausage, ham, shrimp, crab and once, lobster. Mine currently uses chicken thighs, smoked & hot sausage, shrimp, a container of lump crab meat, and a few clusters of snow crab, broken up. Sturgeon's 2nd Law, a.k.a. Well, unbeknownst to us, her second son- the married one- showed up, along with a cousin and HIS wife & kids, then another relative dropped in with her son, daughter in law, and grandkids. And just CHOCK LOADED with piles of all the foods my doctor says I can't eat anymore. So, I had a slice of bread, a couple of cookies, a few cups of coffee and fixed myself a turkey breast sandwich when I got home. HMPH! Merry Christmas my LEFT FOOT! On Christmas morning, or at least, by 1:00 pm, we meet at my wife's youngest sister's home for a "brunch". I CAN eat a smidgen of scrambled eggs, 1 biscuit, and a small smoked sausage, but no ham, bacon or gravy. Got no music related gifts, like a guitar, CD, strings, picks or any of that kind of stuff. I was happy enough to be amongst family in a house that was WARM enough. This damned blood thinner my doc's got me on makes me feel the cold more intensly, so I usually have to hunker down by a register... Hope you all have a safe NEW YEAR---don't forget to put your MONEY out, and speaking of which, make sure you carry enough BAIL MONEY on New Years Eve! I started out with NOTHING...and I still have most of it left!

Christmas dinner was at my son's house. Two small smoked BBQ'ed turkeys, a wild goose and a wild duck...assorted salads and veggies. Then my daughter sets out a desert bar with a build your own chocolate brownies (whip cream, coco bits. 3 kinds of Gelato ice cream, caramel, etc., etc.) F' that diet crap even though I'm not supposed to eat this stuff per my diabetic doctors' orders...one (or two) times a year I get down and dirty LOL! Now, I read a column of his once in which he claimed to have some sort of condition that keeps him on a stict dietary regimen. And he follows it strictly all year long----until his BIRTHDAY, when he binges on all the foods he shouldn't eat,( but had always LOVED) and that does it until the NEXT birthday. Well, it works for HIM. I might consider seeing how much I could get away with on only special occasions, or maybe once a year, like Mitch. Larryz Posted December 26, 2014 Posted December 26, 2014 Yeah, that's pretty much my strategy...save up for your birthday, Thanks Giving and Christmas and then be good all the rest of the year...I limit myself to two drinks a day (per doc's orders) but I sneak a third on these days and maybe a fourth one on New Years! Hope you guys have a great one, I'll leave some money out (not sure of this tradition, will a buck do?) and oh yeah, my son is a paramedic just in case I do east to fast LOL! Take care, Larryz

We went to Aunt Martha's for Christmas Day-that have a nice system worked out, where all the foods are in foil trays with burners underneath. They stay nice and warm. Plenty of chicken, ham and roast beef, mac and cheese, rice-but NO BEER! I couldn't believe it-just wrote it off as neo-puritanical wackiness. I got them a bottle of Japanese whisky as a gift-and thank goodness they opened it, I ended up having to sneak a little myself to avoid being totally parched! My gumbo featured home-made Louisiana hot sausage...and when I went back for seconds, I was talking to someone, so didn't look at what I was doing. And the very first ladle full of round 2 contained @1/4 of the hot sausage I put in that pot. Well, I couldn't exactly put it back, now could I?
