I’ve got a video of a concert I did with a University Orchestra back in the early 90’s. Actually it’s basically a 22 piece big band with a couple of synth players covering the string parts because, back then, the classical musicians were forbidden to play with the jazz players (don’t even ask!).
Anyway, I was thinking about loading this video into Nuendo and adding some GigaStudio VSL Strings to this performance to see if I couldn’t get it to sound more like a REAL orchestra (thus a better representation of the music I wrote) and then turn the results into a “before & after” demo for potential clients. I would like to do a 5.1 DVD version of this, if I could. Can you give me any tips on how to prep the stereo material from the video into 5.1 discreet tracks to mix with the new GS3 tracks?

well... here's 'one' way to UpMix stereo tracks when the multi track stems are not available.

a Plugin that works particularly well on material that contains natural ambience and room tone - I use it to 'immerse' stereo location ambient audio in my film work...
[ vst/au/rtas = $495 ]
* it even has algorithms for Mono source material

I like the way they quote from the RPG document on page http://www.cycling74.com/twiki/bin/view/FAQs/UpMixGeneral yet the same document says this should only be done if there is really no alternative. This is the case here - but is it really worth spending that amount of money on something that looks essentially ambisonic in nature?

Sounds like this is going to be a real PITA, not mention a seriously expensive undertaking. The average cos of most of the plugins everyone is suggesting is just over a grand! Worse it appears you need at least a couple to do a proper job of it and the ones that ONLY a grand are connected to hosts that cost S1.5K and up.
I don't know how you guys afford all this stuff. I'm not on a company budget. So it's getting pretty painful spending $1300.00 for a plugin host (ie: UAD-1 Ultra Pak) and then find out that you need to buy six more plugs at 250 a pop to work with that host. Oh wait, I SHOULD'VE gotten the Powercore, another $1500. But the plug that actually does the upmix is an addtitional $1100. When does the pain stop?

I've been considering picking up TC's Unwrap just for the arsenal.

The Unwrap is a part of the System 6000, yes? I wouldn't buy one just for that - it seems a little expensive to me. It is supposed to be a really good reverb unit though, but personally I don't really like TC reverbs all that much myself. I may well be wrong, but it's functionality is almost certainly going to be either a sort of Ambisonics, or else using Phase tricks & comb filtering - and this can be done equally well - if not better - by hand (with practise, admittedly).
How well it will come out is going to depend entirely on the original stereo mix.

It is from the system 6000, but they're porting it to the Powercore platform soon.
I wish I could afford the 6000 just for one function

I'm going to suggest simply to use a PCM stereo wav on the DVD. Let the user figure out how they want to listen to it. If you have some cash to donate then maybe talk to hank at http://www.fdslabs.com/
To me everything I hear that is "converted" to 5.1 doesn't really sound like I would like it to sound. It's really not rocket science.
Sometimes you just have to live with what you got It actually sounds better.
I mean this in the most positive way if this comes across as something other...

Stuart is talking sense here. Leaving the Audio as PCM stereo will allow the end user to use DPL II, or SRS, or Neo-DTS, or whatever fake surround mode they choose. Or of course, leave it as the original Stereo.
