I had my Chinese food on Christmas eve. Today I had one friend over for turkey.

 

How many thermometers do I need to have in order to really know the temperature of the bird? The answer, of course, is one, but how to I find one that's accurate. I believe my mercury in glass lab thermometer but I can't stick that in a turkey breast. All the "instant read" digital cooking thermometers here have a spread of about seven degrees when, in a test, measuring the same pot of hot water.
