This is a guess, but I'd bet that's a Bob Schleicher / Electronic Instrument Service chop from Oakland, California. Ray lived in the Napa Valley, which is not too far away, and this really looks like Bob's work. Their page (tonewheel.com) doesn't show chops on offer any more, but when it did I recall seeing some single-manual options there.

Why chop?

To make the travel weight more manageable. A C3 weighed over 300 lbs.

 

What would you do with rest of Hammond?

With a single manual chop, one could conceivably put the second manual in another box.

Neither the Hammond nor Rhodes were likely owned by Ray. He had no nostalgia for vintage instruments and in the later years on the occasions he was seen playing classic gear it was often supplied by Robbie Krieger's current Keyboardist Nathan Wilmarth who has a massive collection. With only an office used for a music room Ray apparently didn't even have an acoustic Piano in his home. Here is a description of Ray's Napa Valley home:

Yes--He's Ray. It's not like he's ever moving it, and as far as footprint, not really an issue. I've got 2 double manuals for studio, and comparatively I'm nothing.

It's not big deal either way, but on some of the vids he's using an Alesis QS something. I had one--it wasn't good..
