If you have experienced what amazingly great pizza tastes like... you would understand just plain pizza with no nonsense toppings. just cheese and sauce, done.
But for San Diegans who do not know any better, sure, fine, go with pineapples and cinnamon too.

I make homemade pizzas from scratch, which my wife and I consume over a week's time. Usually just pepperoni and cheese (a lot of each), sometimes other substances.

Toppings are secondary.

The crust has to be at least 2 cm thick.

Amen, brother. Pepperoni if you must, but a real cheese pizza requires nothing. Like real NY bagels. Screw that blueberry/cinnamon/cranberry walnut trash. A plain, untoasted bagel with schmear and lox. You'll never go back to Panera.

Ok, the posts since my last pineapple and chicken ban post made me realize there are a lot more toppings that don’t belong on pizza. There’s no way to control this - its bedlam out there and there’s nothing we can do.

I’m gonna just let it go. This is no longer my fight. My pizza will continue to rely on ingredients one would find in Italy but ya’all are free to populate your crust as you desire. Go nuts ... oh, wait - no - don’t put nuts on your pizza!

Native NYer, lived in Chicago for 15 years. That food item they call deep dish pizza is not pizza, it's a bunch of bread with tomato sauce and other stuff on it. With a NY pizza, the crust is the best part; with a Chicago pizza, the crust is pretty tasteless.

Now, Chicago hotdogs are a thing of sublime wonder...

Best piece of pizza I ever had was from a small New York/Italian shop in Stillwater, MN. You basically could choose whatever three toppings you wanted plus cheese and sauce (both fresh and really good too). I had sliced marinated artichoke hearts, feta cheese, and ground buffalo. That is my ideal pizza.

That's (almost) my other favourite pizza topping, what's known around here as "Supreme": ham, salami, capsicum, mushroom, onion, olives, pineapple (!), and optional anchovies (yes please! smile )

My wife and I are always looking for the perfect pizza crust ... firm not floppy (neither thin and crispy nor thick and chewy), and nicely toasted (neither doughy nor charred). smile

I keep it simple with pepperoni, but I’ll tolerate fresh mushrooms (canned mushrooms are gross).

Sometimes bacon and Italian sausage are good, and the right kind of ham can be good as well. I’m not big on peppers but I’ll tolerate them.

In terms of niche toppings, I’ve often wondered what a bit of pulled pork would taste like.

What we call "Canadian Bacon" on Pizza in the US is basically Ham. When you're in Canada, if you ask for Bacon, do you get Ham? Do Canadians have Bacon like in the US, and if so, what do they call it?

My go-to is Meat Lovers which is usually pepperoni, sausage, bacon, and Canadian bacon (ham).

But that wasn't the question. The question was what NEW toppings do you want to see? That's a very different question, as there have been many different ingredients already tried on Pizza. Especially if you consider that American Pizza is nothing like what you get in Italy, which is more like what we would consider an open faced sandwich. They put anything on it that we might put on a sandwich.

How about a creamy pesto sauce with chicken, garlic, spinach, artichoke heart, basil, and a mix of mozzarella and provolone.

As for pizza styles, St. Louis Pizza would probably be a bit of a shock to most of you if you haven't had it. Most people who visit for the first time hate it, actually. It's VERY thin crust (crispy) and we use Provel cheese (not provolone). Provel is actually a processed cheese developed by local pizza joint Imo's that's a blend of multiple cheeses, but other St. Louis Pizza joints use it as well. It's not stretchy like Mozzarella, it's kind of a soft white cheese that comes in ropes.

That's (almost) my other favourite pizza topping, what's known around here as "Supreme": ham, salami, capsicum, mushroom, onion, olives, pineapple (!), and optional anchovies (yes please! smile )

My wife and I are always looking for the perfect pizza crust ... firm not floppy (neither thin and crispy nor thick and chewy), and nicely toasted (neither doughy nor charred). smile


I have zero experience with creating pizza, but major experience consuming it.
One of my favorite recollections can mainly be found on east coast where there are a large sample of italian Americans who fancy themselves highly knowledgable... regardless if they are or not.
A few times here in San Diego I have had some excellent slices.
My main place in San Diego is Bronx Pizza on Washington near First Ave
Three of the guys who worked for the ex boxer owner, broke away and started there own places ... within a few miles away.. Paul started Sicilian Thing on 30th and Luigi has a few places as well. Them and two brothers who have a place off the 78 near 5 - Jefferson exit. Sorry for diversion, but that was for San Diegan musicians.

The thing is... pizza VARIES significantly from visit to visit.
The place that seldom or never varied was in Manhattan back in the 70- 80's.. East side lower 80's. The place was a phenomenon, and was consistently great. The best and most consistent
It was called Ali's the Greatest, I believe. One of the egyptian guys there was a big former sparring partner for the Boxer Muhammed Ali.

I once had a conversation with the old lady who stayed open till 300AM ( quite a feat, if you factor in the crime rate at that time ) she said there were seven levels of quality for the flour, and she used the most expensive... which I readily believe.
The only other thing I have heard is NYC water!!! was somehow better!!

Plain pizza is all I have eaten.
In 70's San Diego had Chicaco transplants, who set up "Chicago Bros", a deep dish, which was excellent.
Down the street about a mile or less from Sicilian Thing is a Chicago deep dish place on 30th, closer to South Park but still in North Park where Sicilian thing is.

I wanted to write a long rant about what pizza is and what a pizza topping should be.

But if you knows Italians, you know that pizza is a religious issue in Italy.

Since it is a matter of religion, I'll respect the forum rules and I'll not talk about it.

Questione
How do the highly opinionated people of Italy view my people from North Jersey, NY area; in terms of pizza acumen?

I am sure there is a vast ecumenical difference between the two territories. Not to mention the opinions of the North and South in Italy and Sicily!

I moved to southern California from Boston in 1978 and was a total East Coast pizza snob. In those days you could NOT get a decent slice anywhere in LA. It was basically ketchup sauce with Velveeta cheese on Bisquick crust - no exaggeration. This has changed in the past 40 years, and apparently so have I. I am currently a big fan of California Pizza Kitchen's cauliflower crust. There. I've said it.

Like MotiDave and others, I miss the classic toppings that were on pizza in my younger days - basically, onions, green peppers, mushrooms, sausage, pepperoni. I have nothing at all against the new variations they've come up with over the last couple decades - ricotta with spinach or broccoli, eggplant, buffalo chicken, grilled veggies, marguerita, "grandma," ziti, yes, Hawaiian is fine, enjoy them all but I never see what I consider the classic version on offer at any of the billion or so pizzerias here on Long Island and that would be my preference (just 'shrooms, peppers, onions).

No, but I've heard good things about it. Were they around back in the '70s? Burbank would have been pretty far out of my operating area back then. I was mostly hanging at the beach in the South Bay in those days.

No, but I'll plan to give it a try when I'm there in a couple of weeks. It's a straight shot down Burbank from my son's house. Then my brother will be at NAMM.

I'm a fairly harsh critic when it comes to pizza. Dino's is pretty damn good.

Well, i wouldn't be surprised of fist fight between italians around pizza :->.

Anyway, i have no idea of the different US pizza styles, so i cannot tell.

The opinions of italian, yes, that change a lot; i grew up in Ancona, a medium/small town in central Italy, and i knew only the pizza there; moved in Pisa, Tuscany, for my university study, and the pizza there is wildly different (cooked in a pan with oil). Both can be good, if well done.

But later my wife, coming from close to Naples, taught me the one and only truth about pizza: you must eat a real Napoli style pizza at least once in your life.

Other notable styles are Roma style and Calabria style; never had a Sicilian style pizza, cannot help there :->.

Than, pizza is like music: everyone have its own preferred one, but difference is richness.

I am very lucky in that there are actual transplanted NYers here in Houston running pizza shops making it exactly like I had growing up back on LI. When I lived in other places like MD and MI, it was a constant quest to find good NY pizza.

That being said, I'm fine with Chicago deep dish when I know that going in. Also, we have several "Verace Pizza Napoletana" places around here and that stuff is fantastic.

Then there's the square pie and something called Detroit style. "In 2012, Shawn Randazzo ... baked a square pie with chicken, bacon, sauteed garlic, onions and barbecue sauce (an “Iron Chef”-esque twist) at the International Pizza Expo in Las Vegas. The pie made Randazzo the World Champion Pizza Maker of the Year and the envy of his pizza peers."

This reminds me of a short story when visting a couple of my mother's much older friends (long deceased) that were two Italian sisters that lived together in Philly. Their father made a very good living as a contractor in Philadelphia who could hardly speak a word of English so they were well-off.

They told me a story that when they were kids their mother who could speak little English made 'tomato pie". They invited their friends from school over to eat it and all of the them laughed. "A tomato PIE!!!!" (they thought of pies like, apple or cherry). They made fun. They went over to have a piece. Obviously, they loved the taste (it's pizza!) and kept coming back. This probably was around 1915 to 1920. They were both over 80 years old when they told me the story long ago. (like I said who are now long deceased). Their mother before long could not keep up with the requests for her to make her "tomato pies".

(I have to say too these were probably the nicest 2 people I ever met. You could not visit them without coming out of the house with bags of lasagna, pies, cakes, salads, all types of Italian food handing over to you with big smiles or they would be very offended if you didn't take it.)

I have a friend and neighbor (named Lombardi!) from New Jersey who still refers to pizza as tomato pie. You wanna "pizza pie?" translation: "piece of pie". He also calls marinara sauce "Sunday gravy".
