We're picking up a Yamaha MG24/14 mixer soon. It has XLR outs on the mains. There are 1/4" returns on the snake. Are there any reasons that I shouldn't just splice a female XLR on to the returns cables in place of the 1/4" to go to the amps?

That Yammy should have 1/4" outs for the mains as well.

Absolutely not, but don't splice them, replace the TRS connectors with XLR. Just make sure you solder them properly, putting tip to pin 2 and ring to pin 3.
